Patrón’s Hacienda Experience is happening right now at Sydney’s Casa Merida. If you weren’t already aware, the month-long menu takeover matches the world’s finest tequila with some of the country’s best Mayan-inspired cuisine.

Those paying close attention to last week’s launch would have also spied the off-menu ‘Tulum Azul’ cocktail shared exclusively to Boss Hunting followers. Inspired by the cenotes of Mexico’s Yucatán Peninsula and with a backbone of barrel-aged Patrón Reposado, the scrumptious and colourful cocktail is brought to life by blue curacao, lime, ginger and a sweet honey foam topped with agave. And like all good things in life – if you don’t ask for it, you won’t get it.

The one-off treat is a must-try when in the backstreets of Potts Point throughout the month of September. And what if the sweetness of the Tulum Azul doesn’t quite tickle your tastebuds? You can always fall back on the character and depth of Patron’s aged statement range, where the aromas and flavours of tobacco, vanilla and cocoa from the spirit’s barrel contact pair perfectly with the dynamic food flavours of the special menu.

If you missed them, culinary highlights include Patrón caramalised pineapple with swordfish al pastor tacos and a Patrón-grilled half chicken with guajillo sauce and charred corn. Liber Osorio, owner of Casa Merida, interestingly stands by the special menu’s entrée – on the shell roasted scallops with Patrón ancho chilli and ginger butter. He says the “fresh produce and the combination of the sweetness and spice with cultured butter is just a great complement to the fine flavour of the scallops.”
