Italy’s most celebrated panini maker, from Florence’s famous Ino Panino, is coming to Sydney in just a few weeks for two very short pop-ups, first setting up at Sammy Junior and then heading on over to the country’s most awarded cocktail bar, Maybe Sammy, the following day.

Had a good panini in Sydney lately? That’s likely a no, simply because nowhere in Australia really does the Italian-born sandwich justice. This city has plenty of clout when it comes to the best sandwiches like the Reuben, the banh mi and even the katsu sando, but search for this very specific type of bread-framed brilliance and you’ll be starved for quality.

So Alessandro Frassica, the man behind Ino Panino, should be more than welcome when he starts serving up those fresh paninis. He’ll be using local NSW produce to help localise the sandwiches, serving them up alongside the invariably satisfying cocktails pumped out by the Maybe Sammy team.

Since opening Ino Panino in 2006, Alessandro Frassica has been showered with numerous awards, including Best Designer Sandwiche at the 2022 Food and Wine Italia Awards. Ino Panino even clocked in as the runner-up in 50 Top Italy 2023’s ranking of the best sandwiches in the country.

The Ino Panino pop-up will be blindingly quick, so expect long queues to start snaking around the corner as soon as Frassica starts serving. Times and dates below.
