- Three-Michelin star establishment and the world’s #1 ranked restaurant (according to La Liste) — L’Enclume — is making its way back to Bathers’ Pavilion, Sydney for a second exclusive residency.
- Helmed by farm-to-table pioneer Simon Rogan MBE, who has earned nine Michelin stars across his restaurant group, much like its 2023 stint, it promises to be a sell-out affair.

Following the success of its 2023 visit, which left over 2,000 tables on the waitlist, Simon Rogan MBE’s L’Enclume is making a triumphant return to Bathers’ Pavilion for a six-week residency.
The forthcoming iteration promises an entirely new 14-course tasting menu, meticulously crafted by Rogan in collaboration with Bathers’ Pavilion Executive Chef Aaron Ward — a 2025 Good Food Guide Awards Chef of the Year finalist — and showcasing Australia’s internationally renowned produce.

The only real hint regarding what said menu could resemble at this stage is that a fresh take of L’Enclume’s iconic Anvil dish (and restaurant namesake) will be represented, delivered with the restaurant’s signature service style.
Simon Rogan himself will lead a team of 15 chefs and key front-of-house personnel, ensuring that no detail is overlooked in this culinary experience of the year; further enhanced with custom crockery, hand-forged cutlery, bespoke art installations, as well as wine pairings curated by Group Head Sommelier Valentin Mouillard (Michelin Sommelier of the Year Worldwide).

There will also be an exclusive cellar list with the option to pre-arrange rare vintages and bottles prior to booking dates.
“The L’Enclume team and myself are beyond excited to return to Bathers’ Pavilion this July after the incredible reception we received in 2023,” said Rogan, who now boasts nine Michelin stars across his entire restaurant group.
“During my time in Sydney, I fell in love with Australian produce — it’s honestly some of the very best in the world… Some of those standout products like marron, snow crab, and the best beef in the world along with unique ingredients such as quandong and wattle.”

“Now that we’ve spent time in Sydney the approach is different and our local knowledge expanded, we want to take our L’Enclume expertise and create something entirely new.”

Each service will only accommodate up to 80 guests, with a private dining room available for groups of 12-15. The 14-course tasting menu itself is priced at $590 per person, while wine pairings range from $230 to $1,200 a head (non-alcoholic pairing is also offered at $120).
